Mozzarella Cheeseburgers with Tomato Pesto

My 3 year old likes to be a little creative with words that we use, thus the "cheeseyburger" was born.

This very moist cheese burger features fresh mozzarella that melts inside the burger while it's cooking in the pan and a very savory tomato and basil pesto which is used instead of traditional mayo, ketchup and mustard.

Honey Ham Baked Chicken with Tomato Plum Salad

On our last visit to the local grocery store I found some amazing looking chicken breasts and I also picked up some plums. 

I've been dying to attempt a stuffed chicken breast for a long time and it was a lot of fun for the little one to sprinkle the ingredients inside of the chicken breast. 

I wasn't sure what I was going to do with the plums, but they paired up nicely, and hopefully you'll agree!

Peanut Butter Oatmeal Banana Cookies

I asked my little one last night.... what can we bake tomorrow? She shouts out BANANA COOKIES!!! Hmmmm OK, that's one that I haven't tried yet.  But I loved her enthusiasm and didn't want her to feel like her ideas couldn't be put into action.  So we found a recipe for Peanut Butter Oatmeal Banana Cookies YUMMM!!!

This way for a fun messy sticky time, great for a 4 year old on spring break from school :)

Marinated Swordfish with Artichoke Salad

It was a unanimous decision that it was time to have a seafood night, so off to the store we go to get some fresh fish and other yummy goodies.  Whole Foods Market had an amazing piece of swordfish just calling out to us! We wanted something different to go along with the dish and an artichoke salad was clearly the way to go.  After taste testing several items from their deli section we decided on some roasted red peppers, roasted tomatoes, and some marinated baby artichokes.  YUMMMMMMM.

Rosemary Focaccia Bread Pizza

My 3 year old adores pizza. It doesn't matter what type of pizza it is, she loves it. We've been working on new things in the kitchen recently, and I decided that it was time for us to attempt our own pizza, adding a few things in that Mommy loves as well!

Here's my twist on the classic margarita pizza.
