Marinated Swordfish with Artichoke Salad

It was a unanimous decision that it was time to have a seafood night, so off to the store we go to get some fresh fish and other yummy goodies.  Whole Foods Market had an amazing piece of swordfish just calling out to us! We wanted something different to go along with the dish and an artichoke salad was clearly the way to go.  After taste testing several items from their deli section we decided on some roasted red peppers, roasted tomatoes, and some marinated baby artichokes.  YUMMMMMMM.
 
Follow me this way to a swordfish and artichoke delight!

Prep time:    45-60 min
Cook time:    15 min
Eating time:  Savor it!                                     

You will need these kitchen tools:
Cutting Board
Knife
Large Bowl (for salad)
Glass dish (for marinading)
Steamer

You will need these ingredients:
1/3c sherry cooking wine
1Tbsp minced garlic
1/3c lemon juice
16oz swordfish
1/8c soy sauce
1/8c teriyaki sauce
1/4 tsp salt and pepper
1Tbsp poultry  seasoning
1c romaine lettuce
1c red leaf lettuce
3/4c roasted tomatoes
1c roasted red peppers
1c marinated baby artichoke hearts
1 handful kalamata olives
6-8 mozzarella cheese balls (small)
1 full crown of broccoli
1 lemon cut into wedges (optional)


How to prepare:
Combine the first 8 ingredients in the glass dish.  Marinade the swordfish for 45 min to 1 hr flipping frequently.

While swordfish if marinading, work on preparing salad.  Slice the roasted tomatoes, peppers and artichoke hearts into small bite size pieces. Toss with the lettuces and top with the olives and mozzarella.
Prepare broccoli for steaming, and slice the lemons if you are using them.

How to Cook:
Preheat your grill, or use a griddle at 350 degrees. Cook swordfish for 5 min on each side, and steam broccoli while swordfish is grilling until tender but still bright green.  And then enjoy!!!!

My 4 yr old daughter cleaned her plate!!  My husband wanted seconds (not allowed though gotta have the leftovers for the next day haha) and I was very proud of a well made healthy meal.  I hope you enjoy this meal as much as my family did.
