Chocolate Covered Strawberry Bars


I've had some strawberries, raspberries and chocolate pieces staring me in the face for days and I decided that instead of cooking something like chocolate covered strawberries (and devouring them minutes later), that I would bake something with the little one. She was excited to mix strawberries and bananas together and spread strawberry jam on to the bars!

Cook Time: 45 minutes

Kitchen Gadgets You Will Need:
  • 1 Cutting Board
  • 2 Mixing Bowls
  • 1 Knife
  • 1 Stand/Hand Mixer
  • 1 Whisk/Fork
  • 1 Spoon Spatula
  • 1 1/4 Cup Measuring Cup
  • 1 1 tsp Measuring Spoon
  • 1 1 tbsp Measuring Spoon
  • Tin Foil
  • Cooking Spray
  • 8" Square Baking Dish
Ingredients:
  • 1/2 Cup Brown Sugar
  • 2 Cups Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 Cup Butter (1 Stick)
  • 2 Eggs
  • 1 Cup Sugar
  • 3/4 Cup Fruit Jam (Strawberry)
  • 1 1/2 Cup Semi-Sweet Chocolate
  • 4-5 Strawberries
  • 1 Banana
  • 3 tbsp Water

Preheat oven to 400 degrees.

Mix flour, baking powder and salt in a small bowl. With your hand mixer, beat softened butter, white and brown sugar, 3 tbsp water, 2 eggs and vanilla in a large bowl. Gradually mix in your flour mixture. 

In your small bowl (that was just emptied), mix your strawberries and banana into a paste. This should yield about 3/4 of a cup, if not more. Mix 1/4 cup at a time into your batter, mixing with your hand mixer. Add 1 cup of your chocolate pieces. 
Line your baking dish with tin foil and spray with cooking spray. 

Fill your baking dish with your mixture, leaving about a cup of your batter. Spread your fruit jam (we used strawberry) evenly on to your batter and then cover your jam with the rest of the batter. Bake for one 45 minutes, rotating half way.
