I asked my little one last night.... what can we bake tomorrow? She shouts out BANANA COOKIES!!! Hmmmm OK, that's one that I haven't tried yet. But I loved her enthusiasm and didn't want her to feel like her ideas couldn't be put into action. So we found a recipe for Peanut Butter Oatmeal Banana Cookies YUMMM!!!
This way for a fun messy sticky time, great for a 4 year old on spring break from school :)

You will need these kitchen tools: Preheated oven to 300° Large Bowl Fork Cookie Sheet Foil (for easy clean-up) | You will need these ingredients: 2 bananas, mashed 1c peanut butter 1/2c white sugar 1/2c brown sugar, packed 2 egg whites 2c whole wheat flour 1tsp baking soda 1c rolled oats |
In the Large bowl, combine mashed bananas (use the fork to mash the bananas), peanut butter and the 2 sugars until smooth. Mix in the egg whites.
Add in the whole wheat flour and the baking soda, until blended. The mixture is pretty thick and sticky, so making sure your hands are well cleaned (and the little one if he/she is helping) fold in the rolled oats by hand. This was the best part!!
How to Cook:
Make sure your oven is preheating to 300°. Line your cookie sheet with foil (this is something I always do simply to help with clean up!).

By hand drop 2'' size balls of dough on the cookie sheet. Bake at 300° for 15 min. Recipe yields 3 dozen cookies.
I put 2 of them in the snack size baggies so we can enjoy them for the rest of the week. These will make great snacks for our road trip this weekend..... great sources of protein.
Afterthought...... want to add more nutritional value? Sneak in some flax meal for extra fiber and omega 3!
